We love cheese. The dogs love cheese. And who doesn’t love French cheese from Trader Joe’s?
Nobody that’s who. So we had to try this gorgeous mimolette. It’s looks like it might be like a cheddar but it’s actually closer to Edam in origin. It was invented (is cheese invented?) at the request of Louis XIV and it’s delicious, kinda of like a young parmesan and it ages real nice too.
It’s got a rough gray rind apparently made by something or someone called “cheese mites”.
We cut that part off and ate the yummy part on water crackers.
After much begging the dogs got a small sliver. or 4.
